Potato – Beef – Curry
The perfect potato – beef – curry recipe with a picture and simple step-by-step instructions.
- 550 g Waxy potatoes
- 750 g Beef goulash / pre-meal
- 4 dl Coconut milk
- 1,5 tbsp Desiccated coconut
- 5 dl Water
- 1 piece Big onion
- 3 tbsp Roasted peanuts
- 1 tbsp Mild curry
- 1 tbsp Curry hot
- 0,5 tsp Purple Curry see my KB
- 4 tbsp Soy sauce
- 1 piece Bay leaf
- 2 tbsp Lemon juice
- Cut the beef into small cubes
- Peel the potatoes and onions and cut into bite-sized pieces
- 2.2 dl. Put the coconut milk and the spices in a pan and let it boil
- Sear the beef and season lightly
- Add the beef, peanuts and the remaining coconut milk, water, lemon juice, potatoes and onions and simmer gently for 40 minutes.
- If you like, you can add pieces of pineapple from the can
