Potato – Beef – Curry

The perfect potato – beef – curry recipe with a picture and simple step-by-step instructions.

  • 550 g Waxy potatoes
  • 750 g Beef goulash / pre-meal
  • 4 dl Coconut milk
  • 1,5 tbsp Desiccated coconut
  • 5 dl Water
  • 1 piece Big onion
  • 3 tbsp Roasted peanuts
  • 1 tbsp Mild curry
  • 1 tbsp Curry hot
  • 0,5 tsp Purple Curry see my KB
  • 4 tbsp Soy sauce
  • 1 piece Bay leaf
  • 2 tbsp Lemon juice
  1. Cut the beef into small cubes
  1. Peel the potatoes and onions and cut into bite-sized pieces
  1. 2.2 dl. Put the coconut milk and the spices in a pan and let it boil
  1. Sear the beef and season lightly
  1. Add the beef, peanuts and the remaining coconut milk, water, lemon juice, potatoes and onions and simmer gently for 40 minutes.
  1. If you like, you can add pieces of pineapple from the can
