Beef and Guinness Potjie Recipe

Ingredients for 4 servings:

  • 3 tbsp olive oil
  • 1 kg beef goulash
  • 2 tbsp garlic, chopped
  • 250 ml beef broth
  • 1 can of beer (Guinness), 440 ml
  • 250 ml red wine
  • 2 tbsp tomato paste
  • 2 tbsp sugar
  • 1 tbsp thyme
  • 2 tbsp Worcestershire sauce
  • 4 bay leaves
  • 3 tbsp butter
  • 6 potatoes, peeled, cut into approx. 1 cm cubes
  • 2 large onions, chopped
  • 6 carrots, peeled, sliced
  • 2 tbsp parsley
  • salt and pepper

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 4 hours; Total time approx. 4 hours 30 minutes

Heat the olive oil in a pan, season the meat lightly with salt and pepper, and sear. This takes about 5 minutes. Add the garlic and fry for 1 minute. Add the stock, Guinness, red wine, tomato paste, sugar, thyme, Worcestershire sauce, parsley, and bay leaves. Stir well and simmer gently for about 1 hour. Brown the carrots in butter in a separate pan and add them along with the onions and potatoes. Simmer the stew for another 3 hours and enjoy with a good red wine or Guinness.
