Zucchini noodles with spicy peanut sauce

Ingredients for 2 servings:

  • 2 zucchinis
  • 2 carrots
  • 1 bell pepper
  • 1 handful of spring onions
  • 1 tbsp, heaped sesame seeds
  • 1 clove(s) garlic
  • 4 tbsp peanut butter
  • 1 lemon(s)
  • 3 tbsp soy sauce
  • 1 tsp ginger, chopped
  • chili flakes
  • 1 tsp peanut oil

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 6 minutes; Total time approx. 26 minutes

Peel and chop the garlic, mix the peanut butter, soy sauce, and chopped ginger until smooth. Squeeze the lemon and add the juice to the sauce, season with chili flakes. Wash the zucchini and carrots and spiralize them into noodles. Wash the bell peppers and cut them into very thin strips. Wash the spring onions and slice them into thin rings. Heat the peanut oil in a pan and heat the zucchini, carrots, bell peppers, and spring onions for about 3 minutes. Then add the peanut sauce and heat for another 3 minutes. Serve sprinkled with sesame seeds.
