Beef carpaccio

Ingredients for 3 servings:

  • 200 g beef fillet(s), well-hung
  • 1 lemon(s), freshly squeezed juice
  • Extra virgin olive oil
  • Salt and pepper, black from the mill
  • e.g. arugula, amount according to taste
  • Parmesan in a piece

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

with rocket and parmesan

Using a sharp knife, slice the meat across the grain into the thinnest slices possible. Lightly salt the slices, season with freshly ground black pepper, and arrange them on a large plate. Drizzle the meat with olive oil and a little lemon juice, and season with salt. Then finely grate the Parmesan cheese and sprinkle it over the carpaccio. Toss the arugula with a light dressing of olive oil, lemon juice, salt, and pepper and spread it over the meat. Ciabatta and a full-bodied red wine complete the dish.
