Beef Cross Fried with Vegetables

Ingredients
 

Flesh:

  • 400 g Beef fillet
  • 4 tbsp Peanut oil
  • 3 tbsp Soy sauce
  • 5 tbsp Sake

Vegetables:

  • 10 g Mu Err mushrooms - dried
  • 150 g Paprika - colorful
  • 50 g Carrot
  • 50 g Spring onion
  • 50 g Leek
  • 50 g Cucumber
  • 30 g Cashew nut fresh
  • 100 g Bamboo shoots canned
  • 1 tbsp Hot chilli flakes
  • 2 tbsp Soy sauce
  • 2 tbsp Sake
  • 2 tbsp Five-spice powder
  • Starch for meat and sauce
  • Peanut oil for frying the meat

Instructions
 

Flesh:

  • Cut the fillet into small slices 2 - 3 mm thick. Mix a marinade from peanut oil, soy sauce and sake, place the meat there and let it steep. (recommended to start early if it is to be prepared in the evening),

Vegetables:

  • Mu Err soak mushrooms in hot water and let them swell. Wash, dry, core and cut the peppers into bite-sized pieces. Peel the carrot and cut into thin, bite-sized segments. Clean the spring onions, cut into oblong, oblique pieces. Clean, wash and slice the leek. Wash the cucumber, cut into short strips with the skin on. Drain the bamboo shoots. Remove the stalk from the swollen mushrooms and cut into small pieces.

Completion:

  • Preheat the oven to 50 °. Spread out a large cloth and cover it well with cornstarch. Lift the thin meat slices out of the marinade, distribute them loosely on the starch and sprinkle them with starch. Heat about 1 cm of peanut oil in the wok and fry the dusted meat in portions. Keep warm on a plate in the oven.
  • Pour 2/3 of the oil left in the wok from the frying and toss all the vegetables in it until they are firm to the bite. Meanwhile, add the rest of the meat marinade, additional soy sauce, sake, possibly some of the mushroom water, the chilli flakes and cashew nuts and stir with them. Before serving, stir in a little cornstarch mixed in cold water so that the vegetables get a creamy consistency. Season to taste with the spice powder.
  • Include the rice served in the preparation time. My tip ..... cook rice first according to the package instructions and put it in bed to keep warm ........ ;-), then you don't have any stress, because everything else has to be prepared in quick succession .. ........
