Beef fillet with chicory

Ingredients for 2 servings:

  • 300 g beef fillet(s), in very thin slices
  • 4 tbsp balsamic vinegar
  • 3 tbsp pumpkin seed oil or walnut oil
  • 2 tsp sesame seeds
  • 1 thick chicory
  • 3 tomatoes, pitted, diced
  • 30 g pumpkin seeds
  • 2 tbsp chives, in rolls
  • Salt and pepper, from the mill

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Mix a marinade of vinegar, oil, sesame seeds, and pepper. Marinate the meat slices for 1 hour, then lightly tap off excess oil and fry briefly. Keep warm. Halve the chicory lengthwise and cut into wide strips. Deglaze the pan with the marinade. Add the chicory, tomatoes, pumpkin seeds, and chives, and simmer for 5 minutes, stirring. Season with salt and pepper. Add the meat and serve immediately. Serve with rice, baked potatoes, or baguette.
