Apricot marzipan strudel

Ingredients for 4 servings:

  • 1 pack of strudel sheets
  • 200 g marzipan paste
  • 150 g crème fraîche
  • 1 kg apricot(s)
  • 4 rusks
  • some butter

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Arrange the strudel dough as directed in the instructions. Mix the marzipan with the crème fraîche (mascarpone can also be used!) until spreadable. Wash, dry, pit, and slice the apricots. Crumble the rusk. Spread the marzipan cream thinly over the strudel dough, arrange the apricot slices on top, and sprinkle with rusk crumbs. Fold in the edges of the dough and roll up the strudel. Place in a greased baking dish, brush with melted butter, and bake at 200°C for 35-40 minutes. Tip: Sponge fingers can also be used instead of the rusk.
