Beef fillet with mustard sauce

Ingredients for 4 servings:

  • 800 g beef fillet(s) (tenderloin, center cut, preferably Argentinian)
  • 250 g hollandaise sauce
  • 100 g cream
  • 2 tsp Dijon mustard
  • 100 ml beef broth (instant)
  • n. B. Salt
  • e.g. pepper (preferably steak pepper)

Working time approx. 20 minutes; Cooking/baking time approx. 16 minutes; Total time approx. 36 minutes

very simple mustard sauce, but totally delicious

Cut the beef fillet into approximately 4cm thick slices. Mix the hollandaise sauce, cream, and mustard. Sear the beef fillet for about 2-3 minutes per side. Then place it in the oven at 150°C for about 10 minutes. While the fillet is in the oven, boil the remaining meat with the beef broth and stir in the hollandaise, cream, and mustard mixture. Season with salt and pepper. Place the fillet on a plate and pour the resulting meat juices into the sauce, then bring to a boil briefly. Season the fillet with salt and pepper and serve with the mustard sauce. Serve with croquettes, fries, or fried potatoes.
