Beef Roulades Grandpa’s Style

The perfect beef roulades grandpa’s style recipe with a picture and simple step-by-step instructions.

  • 6 piece Beef roulades
  • 4 tbsp Mustard medium hot
  • 1 Onion
  • 6 piece Gherkins
  • 12 Discs Streaky bacon
  • Salt and pepper
  • 500 ml Cold water

spaetzle

  • 400 g Spaetzle flour
  • 4 size Free range eggs
  • 200 ml Cold water
  1. Knock the beef roulades flat and spread them on the worktop. Brush with mustard, place 2 strips of bacon on top. Place the cucumber and onions cut in strips on top. Season with salt and pepper. Roll up from the narrow side.
  2. Sear the roulades on all sides, add half of the water and simmer in front of you. Add the rest of the water and slowly simmer everything. The roulades are done after a good 60-80 minutes.
  3. Remove the roulades from the sauce and keep warm. If necessary, bind the meat stock with 1-2 tablespoons of flour.
  4. For the spaetzle, mix the flour with the eggs and water. Scrape the spaetzle with the spaetzle sieve. When the spaetzle are on top, lift them out of the pot with a slotted spoon and place in a warming container.
