Beef roulades with curry and dried fruit

Ingredients for 4 servings:

  • 4 slice(s) roulade(s)
  • 4 slice(s) smoked streaky bacon
  • 1 tbsp mustard, hot
  • 2 onions
  • 1 pack of dried fruit (mixed dried fruit)
  • 1 tbsp tomato paste
  • 1 tsp curry powder
  • 300 ml beef broth
  • 1 small bay leaf
  • salt and pepper
  • Oil and butter

Instructions

Working time approx. 45 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 45 minutes

Slice 1 1/2 onions and sauté in oil until translucent. Cut some of the dried fruit lengthwise into strips. Brush the meat slices with mustard and cover with the bacon. Arrange the onions and dried fruit strips on top. Lightly salt the topping and sprinkle a little curry powder over the topping. Roll up the roulades and seal them. Fry thoroughly in hot oil over medium heat until browned. Dice the remaining onion and fry briefly. Sauté the tomato paste. Pour in a little stock. Add the curry powder and a small bay leaf and simmer in a covered pan over low heat for about 90 minutes, adding a little stock occasionally. Remove the roulades and blend the stock with butter in a blender, seasoning with curry powder again if desired. Serve the roulades with rice or mashed potatoes.
