Ingredients for 4 servings:

  • 400 g flour
  • 2 eggs
  • 150 ml water
  • ½ tsp salt
  • 400 g minced meat, mixed
  • 50 g butter
  • 3 tbsp cream
  • 2 onions
  • n. B. salt and pepper, black
  • n. B. garlic
  • e.g. garlic clove(s) or onions
  • 2 tbsp butter
  • 3 tbsp vinegar
  • Salt and pepper to taste
  • Sour cream
  • some stock from stock cubes

Instructions

Working time approx. 1 hour; Rest time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 1 hour 40 minutes

Place flour in a mixing bowl, make a well, and add the water, egg, and salt. Knead the dough into a firm dough (pasta dough), cover with a cloth, and let rest for 20-30 minutes. Mix the meat with finely chopped onions, butter, cream, pepper, and spices. Roll the dough into a rope (1.5-2 cm) and cut off pieces (1-1.5 cm). Roll these pieces into cookies. You can also roll the dough out to a thickness of about 2 mm and then cut out round pieces with a glass. Place the meat mixture on top using a spoon, enclose the meat in the dough, and press the edges shut. Place the pelmeni in boiling salted water or broth. Once the water has returned to a boil and the pelmeni have floated to the surface, let it rest for another 2-3 minutes. Drain the water. Place the pelmeni in a bowl and cover with butter flakes. Pelmeni can be served with butter, sour cream, vinegar or with a mixture of chopped garlic or onions, vegetable oil, vinegar, salt and pepper.
