Beef salad with potatoes and onions

Ingredients for 4 servings:

  • 300 g potatoes
  • 800 g beef, cooked
  • 4 onions, red
  • 6 tbsp red wine vinegar
  • 5 tbsp oil (walnut oil)
  • Salt
  • pepper
  • ½ bunch parsley

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

great use for leftover beef

Boil the potatoes as usual. Drain, let cool slightly, peel, and let cool completely. Then slice. Cut the beef into strips. Peel the onions and slice them thinly. Place them in a bowl with the beef and potatoes and toss everything together. Season the red wine vinegar and walnut oil with salt and pepper to taste to make a dressing and drizzle over the salad. Wash and roughly chop the parsley (coarsely chopped intensifies the flavor) and sprinkle over the salad.
