Beef steaks on a bed of onions

Ingredients for 4 servings:

  • 600 g onion(s), or shallots
  • 2 tbsp fat, (goose fat or nB)
  • 4 steak(s) of beef, fillets or rum steaks, 200g each
  • 1 stalk parsley, flat
  • 1 stalk thyme, fresh
  • Pepper, freshly ground black
  • Sea salt

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

First, preheat the oven to approximately 100°C. Peel the onions or shallots and slice them into thin strips. Heat the fat in a large, non-stick frying pan and fry the vegetables until lightly golden. Season with sea salt and freshly ground pepper. Remove from the pan and drain on kitchen paper. Keep warm in the oven. In the same pan, fry the steaks in the remaining fat over high heat for 2 minutes on each side (do not cook them all the way through!). Season with salt and pepper. Wash and dry the herbs, and remove the stems. Arrange the onions on warmed plates and arrange the steaks on top. Garnish with the herbs.
