Beef steaks with arugula and Parmesan

Ingredients for 4 servings:

  • 4 beef fillet steaks, approx. 250 – 300 g each
  • 2 bunches of arugula
  • Parmesan in a piece
  • Sea salt, coarse
  • Pepper from the mill
  • 3 tbsp olive oil
  • 1 tbsp balsamic vinegar

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Fry the steaks in 1 tablespoon of olive oil, however you like them. Arrange them in the center of the plates. Sprinkle salt generously over the steaks and grind pepper over them. Arrange the arugula on top and drizzle with about 2 tablespoons of olive oil and 1 tablespoon of balsamic vinegar. Finally, grate the Parmesan cheese over the top. I serve it with white bread and a dry Italian red wine.
