Ingredients for 4 servings:

  • 500 g beef fillet(s)
  • 40 g butter
  • 2 onions
  • 30 g flour
  • 250 ml meat broth
  • 125 ml sour cream
  • 2 gherkins, diced
  • 100 g mushrooms, fresh, finely chopped
  • Mustard
  • Salt
  • lemon juice

Instructions

Roughly chop the onion and fry in butter until golden brown, dust with flour, add the broth, and simmer the sauce for 15 minutes. Season with mustard, salt, and lemon juice, and stir in the sour cream. Bring the mushrooms and diced gherkins to a boil in the sauce. Cut the meat into strips and fry in a separate pan over high heat (it must remain pink on the inside; do not overcook it, or it will taste leathery). Mix the rendered meat juices with the sauce, add the meat, and toss briefly in the sauce, but do not bring back to a boil. If desired, refine the sauce with 2 sliced ​​tomatoes and the onions. Serve with: fried potatoes, rice, pasta, or bread dumplings.
