Ingredients for 4 servings:
- 750 g lean beef
- 600 ml water
- Salt

Working time approx. 10 minutes; Cooking/baking time approx. 2 hours; Total time approx. 2 hours 10 minutes
Essence of beef
Sear the beef on both sides in a very hot iron pan. Remove the meat, cut into small pieces, and place in a saucepan. Loosen the cooking residue from the pan with a little water and add it, along with the remaining water, to the pan with the meat. Let the stock simmer over minimal heat for about 2 hours (do not boil!). Then strain it through a fine sieve. Line the sieve with kitchen paper or a napkin if necessary. Season the beef tea with salt to taste. Serve hot in a small teacup or a large shot glass. Beef tea is an excellent aperitif to accompany a good steak.
