Beef with mandarin peel

Ingredients for 4 servings:

  • 350 g steak(s) (beef, from the rib eye), in thin slices
  • 2 tsp soy sauce
  • 2 tsp sherry, dry
  • 1 tsp fresh ginger, chopped
  • 1 tsp oil (sesame oil)
  • 1 tbsp oil (peanut oil)
  • ¼ tsp white pepper, ground
  • 2 tsp tangerine peel, dried, finely chopped
  • 2 tsp soy sauce, extra
  • 1 ½ tsp sugar, finely ground
  • 1 ½ tsp cornstarch
  • 80 ml beef broth

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Place the meat in a bowl. Combine the soy sauce, sherry, ginger, and sesame oil and let the meat marinate for 15 minutes. Heat the peanut oil in a wok. Add the marinated meat and stir-fry over high heat for 2 minutes (until lightly browned). Add the pepper, mandarin orange zest, soy sauce, and sugar and stir-fry briefly. Dissolve the cornstarch in a little beef broth, then pour the remaining broth into the wok. Stir in the cornstarch, bring to a boil, and use it to thicken the sauce. Serve with rice.
