Beef with Peppers, Zucchini, Onions and Basmati Rice

The perfect beef with peppers, zucchini, onions and basmati rice recipe with a picture and simple step-by-step instructions.

Beef with peppers, zucchini and onions:

  • 250 g Steak hip
  • 2 tbsp Sweet hoisin sauce
  • 2 tbsp Sweet soy sauce
  • 2 tbsp Light soy sauce
  • 2 tbsp Sherry or rice wine
  • 1 Red bell pepper approx. 250 g
  • 1 Zucchini approx. 200 g
  • 1 Onion approx. 150 g
  • 1 piece Ginger the size of a walnut
  • 1 tbsp Sunflower oil
  • 250 ml Clear broth (1 teaspoon instant)
  • 3 big pinches Coarse sea salt from the mill
  • 3 big pinches Colorful pepper from the mill
  • 1 tbsp Sweet hoisin sauce
  • 2 tbsp Tapioca starch

Basmati rice:

  • 150 g Basmati rice
  • 350 ml Water
  • 0,5 tsp Salt

Serve:

  • 1 Portion the funnel to the rice

Beef with peppers, zucchini and onions:

  1. Clean / parry the steak hip, cut into strips (works especially well if the meat is a bit frozen!) And serve with sweet hoisin sauce (2 tbsp), sweet soy sauce (2 tbsp), light soy sauce (2 tbsp) and sherry (2nd tbsp) Tbsp) marinate for several hours. Ideally overnight! Clean, wash and cut the peppers into strips. Peel the zucchini with the garnish peeler, cut in half lengthways and slice diagonally. Peel the onion, cut in half, cut into strips and disassemble them. Heat sunflower oil (1 tbsp) in the wok, fry the beef strips vigorously / stir-fry and slide them to the edge of the wok. Now add the vegetables (diced ginger, onion wedges, zucchini slices and paprika strips) one after the other and sauté / stir-fry. Deglaze / pour in the clear broth (250 ml) and season with coarse sea salt from the mill (3 big pinches), colored pepper from the mill (3 big pinches) and sweet hoisin sauce (1 tbsp). Let everything simmer for 2-3 minutes and then thicken with the tapioca starch (2 tbsp) mixed in cold water.

Basmati rice:

  1. Bring the basmati rice (150 g) to the boil in water (350 ml) with salt (1/2 teaspoon), stir well and cook with the lid closed on the lowest temperature setting for about 20 minutes.

Serve:

  1. Press the rice into a funnel and turn it onto the plates. Add the beef with peppers, zucchini and onions and serve.
