- Wash the beef fillet, pat dry with kitchen paper and cut into strips. Peel the garlic clove, press the beef fillet strips with the garlic press, add the oyster sauce (2 tbsp), mix everything well and let marinate for 30 minutes. Clean and wash green peppers and cut into strips. Wash the tomato, remove the stem and dice. Peel the onion, cut in half lengthways and cut into fine strips. Put a few strips aside for serving. Clean / core the chilli pepper, wash and finely dice. Peel and finely dice the ginger. Heat sesame oil (1 tbsp) and sunflower oil (1 tbsp) in the wok, fry the beef fillet strips vigorously / stir-fry and slide them to the edge of the wok. Add the diced ginger and chili peppers and sauté briefly. Now add the green pepper cubes, onion strips and tomato cubes and stir-fry for 2 – 3 minutes. Add lime juice (2 teaspoons), sweet soy sauce (1 tbsp) and light soy sauce (1 tbsp) and stir-fry everything briefly. Season with sugar (1 teaspoon), coarse sea salt from the mill (2 big pinches) and colored pepper from the mill (2 big pinches). Let everything simmer / cook for another 4 – 5 minutes. Stir / mix everything again and again. In the meantime, bring the rice to the boil in 125 ml salted water (½ salt), simmer / boil for 5 minutes and then simmer / cook with a tightly closed lid at a low temperature for about 25 minutes (attention: brown rice takes about 10 minutes longer to cook , as for example: basmati rice). Serve beef fillet wok with green bell pepper and brown rice, garnished with coriander leaves.
