Beer muffins

Ingredients for 1 servings:

  • 400 g flour (you can also use half wheat and half wholemeal flour)
  • 2 tbsp baking powder
  • 1 tbsp baking soda
  • ½ tsp pepper
  • 2 tsp sugar
  • ½ liter of beer
  • 50 g cheese, grated

Working time approx. 15 minutes; Total time approx. 15 minutes

makes 24 hearty muffins

Preheat the oven to 200°C. Grease the muffin tin thoroughly, as the batter contains no fat and the muffins would otherwise stick. Mix the flour with the baking powder, baking soda, pepper, and sugar. Then carefully fold in the beer. It’s best not to pour it all in at once, but add it gradually. Finally, fold in the grated cheese (any cheese you like will do). Fill the batter two-thirds full into the muffin tins and sprinkle with a little more grated cheese, if desired. Bake for 20-25 minutes at 180°C (convection oven) and serve while still warm; it tastes best! Perhaps with a well-chilled beer?
