Beetroot and apple salad with bulgur, feta and mint

Ingredients for 4 servings:

  • 500 g beetroot
  • 1 apple
  • 500 g coleslaw
  • 100 g bulgur
  • 5 sprigs of mint
  • 100 g feta cheese
  • Salt
  • pepper
  • olive oil
  • Honey
  • 1 lime(s)

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

First, cook the bulgur wheat in salted water or vegetable stock. Meanwhile, dice the beetroot and apple. Toss them in a bowl with the coleslaw. Crumble the feta cheese over the top and add the chopped mint. Drain the bulgur wheat, cool it with cold water, and add it to the bowl. Squeeze the lime juice and make a dressing with the juice, honey, a dash of olive oil, salt, and pepper. Toss to combine with the salad.
