Beetroot, apple, and walnut salad with feta cheese and lamb's lettuce

Ingredients for 3 servings:

  • 500 g beetroot
  • 1 apple
  • 30 g walnut kernels, approx. 1 handful
  • 125 g feta cheese
  • 50 g lamb’s lettuce
  • 2 tbsp balsamic vinegar, lighter
  • 2 tbsp olive oil
  • ½ tsp salt
  • Pepper, from the mill, approx. 25 turns
  • ½ tsp sugar
  • 1 tsp mustard
  • 1 tsp honey

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Grate the beets and apple (with skin on, without core), chop the walnuts into medium-sized pieces, not too finely. Cut the feta into small cubes and wash the lamb’s lettuce. Place everything in a bowl. Mix the remaining ingredients into a dressing, pour over the salad, and toss to combine. Tip: This salad tastes great with garlic baguette.
