Beetroot salad Lotte style

Ingredients for 6 servings:

  • 1,000 g raw beetroot
  • 2 apples, sour
  • 1 large onion(s)
  • 1 bunch parsley or 2 tbsp dried parsley
  • 1 bunch wild garlic or 2 tbsp dried wild garlic
  • 1 handful of walnuts
  • 1 tsp, heaped horseradish
  • 1 tsp, heaped mustard
  • 1 tsp, heaped honey
  • 4 tbsp olive oil
  • 2 tbsp Aceto balsamico 6% acid
  • some salt, from the mill
  • some pepper, mixed, from the mill

Instructions

Working time approx. 30 minutes; Rest period approx. 1 day; Total time approx. 1 day 30 minutes

with apples, nuts and horseradish

Peel the raw beetroot, apples, and onion and cut into thin sticks. Chop the parsley, wild garlic, and walnuts. Combine all ingredients in a bowl and mix well. Season with salt and pepper. Refrigerate for a day to allow all the ingredients to infuse.
