Cauliflower in mustard sauce

Ingredients for 4 servings:

  • 850 g cauliflower
  • salt and pepper
  • 30 g butter
  • 20 g flour
  • 125 ml broth
  • 125 ml whipped cream
  • 2 tbsp mustard, grainy
  • 1 pinch(s) of sugar
  • 2 eggs, including the yolk
  • 1 bunch of chives

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Clean the cauliflower, cut into large florets, wash, and cook in boiling salted water for 15-20 minutes. Melt the fat in a saucepan, stir in the flour, and sauté. Add 1/4 liter of the cooking water, stock, and cream, and simmer for about 10 minutes, stirring. Season generously with mustard, salt, pepper, and sugar. Whisk the egg yolk and stir into the sauce. Pour the sauce over the cauliflower florets, finely chop the chives, and scatter them over the top. Serve with grilled sausages and boiled potatoes. One of my favorite recipes!
