  • 200 ml sparkling wine, dry
  • 500 g gelling sugar 3:1

Nectarine jam with sparkling wine, in the style of the popular cocktail, makes about 5 glasses of 200 ml each

In a suitable saucepan, purée the pitted, skinned, and sliced ​​nectarines until very fine. Add the sparkling wine and preserving sugar and mix well. Bring to a boil. Once the cooking time has begun, boil briskly for about 3 minutes, stirring constantly. Then test the setting. Only when the jam has set, fill it to the brim in 5 twist-off jars (200 ml each) and seal immediately. Let it stand upside down for 15 minutes, then carefully turn it over and chill thoroughly, ideally overnight. I always use a 3:1 preserving sugar ratio for this jam so the jelly doesn’t stay too soft.
