Ingredients for 1 servings:
- 250 g currants (sea truffles), red, organic, stemmed, washed
- 125 g raw sugar, organic
- 6 cardamom pods, organic, split
- 20 g ginger, organic, fresh, peeled, finely grated

Combine the berries and sugar in a large pan and bring to a boil. While the mixture is boiling, remove the cardamom seeds from their pods and stir them into the mixture along with the ginger. Reduce the heat and simmer for about 15 minutes. Purée everything thoroughly with a hand blender, continuing to simmer until the mixture has set. Transfer the mixture to a fine cotton cloth and squeeze it over a bowl. When no more juice can be extracted, pour the juice into two sterilized jars. Seal the jars and turn them upside down for 10 minutes.
