Beny's LuBu pan with tuna and vegetables

Ingredients for 6 servings:

  • 1 head of broccoli, approx. 500 g
  • 3 onions
  • 2 bell peppers, red
  • 2 carrots
  • 4 cans of tuna in oil, approx. 180 g each
  • 1 can of corn, approx. 330 g
  • 2 cans of chopped tomatoes, approx. 400 g each
  • some Thai curry paste, red, e.g. Cock Brand Red Curry Paste
  • e.g. zucchini
  • n. B. Beans
  • some paprika powder
  • 2 cups rice
  • 4 cups water

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Wash, trim, and chop the vegetables. Meanwhile, cook the rice according to the package instructions. Brown the tuna in a pan and add the onions about 1 minute later. Leave the tuna and onions in the pan and push them to the side to make room for the vegetables. Add the vegetables and fry in olive oil. Season with paprika and salt. Add the chopped tomatoes and curry paste. Season to taste and serve with the rice.
