Ingredients for 1 servings:
- 3 m.-sized eggs
- 30 g ammonium bicarbonate
- 1,500 g flour
- 3 packs of gingerbread spice
- 1 cup milk, warm
- 250 ml water or coffee
- 500 g honey
- 500 g sugar
- 125 g butter
- e.g. powdered sugar
- e.g. lemon juice
- e.g. chocolate
Instructions
Working time approx. 1 hour 30 minutes; Rest time approx. 12 hours; Cooking/baking time approx. 15 minutes; Total time approx. 13 hours 45 minutes
according to a very old recipe
Bring water/coffee, honey, sugar, and butter to a boil and let cool. Meanwhile, add the baking powder to the warm milk and let it rise. In a large bowl, combine the flour and gingerbread spice. Add the remaining ingredients (milk, baking powder, and the cooled mixture) to the bowl and mix well. The dough will be relatively firm. Cover and refrigerate overnight. The next day, roll out the dough on a floured surface and cut out shapes. We use a glass and the “plastic base” of a deck of playing cards for cutting out shapes. Bake the cookies at 180°C (top/bottom heat) for about 15 minutes. Once they have cooled, decorate as desired. We traditionally do it with icing or chocolate.
