Ingredients for 1 servings:

  • 200 g flour
  • ½ pack of baking powder
  • 50 g ground almonds
  • 2 eggs
  • 150 g sugar
  • 1 packet of vanilla sugar
  • Lemon peel, untreated, grated
  • 1 pinch of salt
  • 80 ml oil
  • 200 ml milk
  • 200 g berries (strawberries, raspberries, blueberries)

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

makes 12 pieces

Beat the eggs with sugar, vanilla sugar, salt, and lemon zest until frothy. Stir in the oil, milk, flour, and baking powder. Fold in the berries. Fill the muffin cups with batter to within 1 cm of the rim. Bake at 170°C for approximately 20-25 minutes.
