Berry porridge layered with chia pudding

Ingredients for 1 servings:

  • 2 tbsp chia seeds
  • 6 tbsp almond milk (almond drink), as desired
  • 1 tsp maple syrup
  • 2 tbsp soy yogurt (yogurt alternative), as desired
  • 5 tbsp oat flakes
  • 1 tsp goji berries
  • 100 ml almond milk (almond drink)
  • 100 ml water
  • 150 g mixed berries, frozen
  • 2 tsp maple syrup
  • 1 tsp peanut butter, as desired
  • e.g. fruits, fresh, or yogurt, linseed, etc.

Instructions

Working time approx. 15 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 50 minutes

For the chia pudding, mix the chia seeds with the almond milk and let stand for at least 30 minutes, stirring occasionally. Stir in the soy yogurt before serving. For the porridge, place the oats, goji berries, almond milk, water, berry mix, maple syrup, and peanut butter in a saucepan. Bring to a boil uncovered, then reduce the heat to low and simmer for about 5 minutes over medium heat. Stir occasionally. Then remove from the heat, put the lid on, and let stand for about 10 minutes. To finish, layer the chia pudding and berry porridge in a glass. Garnish with a dollop of yogurt, fruit, and flaxseed, if desired, and serve.
