Lemon bulgur salad

Ingredients for 4 servings:

  • 200 g bulgur
  • 2 tbsp oil
  • 1 onion(s)
  • 2 tbsp tomato paste
  • 2 tsp paprika paste
  • 1 bunch of parsley
  • ½ lemon(s), the juice
  • 1 tbsp balsamic vinegar
  • ½ tsp pepper
  • 1 pinch of salt

Instructions

Working time approx. 15 minutes; Rest time approx. 4 hours; Cooking/baking time approx. 5 minutes; Total time approx. 4 hours 20 minutes

Prepare the bulgur according to the package instructions and place it in a large bowl. Heat a little oil in a pan and finely dice the onion. Sauté it in the pan with the tomato paste and paprika. After about 3 minutes, set it aside. Finely chop the parsley and mix it with the onions from the pan and the remaining ingredients. Season to taste. Then cover and let it rest in the refrigerator for about 4 hours. Enjoy! Your Joey
