Instructions

Clean and wash the peppers, cucumber, and tomatoes. Slice the cucumber, wedge the tomatoes, and roughly dice the peppers. Peel the onions, cut 2 into thin wedges, and dice the remaining onions. Peel and dice the garlic. Wash and finely chop the parsley. Mix the vinegar, salt, pepper, and oregano, then whisk in 4 tablespoons of oil. Knead the ground beef, egg, breadcrumbs, garlic, diced onion, and parsley, and season generously with salt, pepper, and cinnamon. Cut the feta cheese into about 10 pieces. Form the minced beef into about 10 long patties, pressing a piece of feta cheese into the center of each. Thread 2 bifteki lengthwise onto a wooden skewer and fry in hot oil for about 10 minutes, turning occasionally. Mix the peppers, cucumber, tomatoes, onion wedges, and the vinaigrette together, then serve with the olives and the bifteki. Garnish with oregano. It goes well with tzatziki and fresh flatbread.
