Suzukakia with Metaxa sauce

Ingredients for 2 servings:

  • 400 g minced meat, mixed
  • 4 tbsp breadcrumbs
  • 2 tsp rosemary, shredded
  • 1 pinch of salt
  • 1 pinch(s) of pepper, black ground.
  • 3 tbsp oil (olive oil)
  • 4 tbsp tomatoes, pureed
  • 2 cl Metaxa 7*
  • 2 tbsp crème fraîche
  • 2 tsp peppercorns, green
  • 125 ml vegetable stock
  • Paprika powder, hot

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Form the ground beef, breadcrumbs, and spices or herbs into small meat rolls (suzukakia) and fry in the now-hot olive oil for about 5 minutes. Remove the rolls from the pan and keep warm. Deglaze the pan juices with the Metaxa, let stand for 2 minutes, stir in the vegetable stock, and after another 3 minutes, add the remaining ingredients. Bring to a boil briefly, and the sauce is ready. Serve with rice or baguette and Greek farmer’s salad.
