Ingredients for 4 servings:

  • 500 g minced meat, mixed
  • 1 roll, from the day before
  • 1 onion(s), finely diced
  • 3 m.-sized carrot(s), finely grated
  • 1 tbsp clarified butter
  • 1 garlic clove(s), peeled and halved
  • 1 tsp spice mix, Greek
  • Parsley, chopped
  • 1 egg(s)
  • 1 pack of sheep’s cheese

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Sauté the onion, carrots, and garlic in a pan until translucent. Remove the garlic cloves and place in a bowl to cool. Cut the bread roll into small cubes, place the minced meat in a bowl, add the bread cubes, egg, parsley, seasoning, and the carrot-onion mixture, and knead well with your hands. Cut the cheese into strips about the thickness of your thumb. I flatten the minced meat in the palms of my hands, place a strip of cheese on top, and shape the minced meat mixture around it, forming a small loaf with no trace of cheese. The loaves are then fried in a pan with a little clarified butter or oil and cooked for about 10 minutes over moderate heat. You can also cut the cheese into cubes and shape the minced dough around them to form balls; this is great for a picnic or buffet.
