- 1 egg yolk
- 1 tbsp breadcrumbs
- 2 tbsp coffee cream
- 1 tbsp beer
- 75 g sheep’s cheese
- Allspice, ground
- Garlic
- oregano
- salt and pepper
Instructions
Working time approx. 20 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 20 minutes
Knead the ground beef with salt, pepper, garlic, oregano, Parmesan cheese, allspice, egg yolk, breadcrumbs, milk, and finely chopped onion into a firm dough. While kneading, add the beer (or seltzer if you prefer) and let it rest in the refrigerator for a few hours. Divide into six portions. Flatten each portion into a flatbread about one centimeter thick. Finely crumble the feta cheese and sprinkle it on half of the flatbreads, leaving the edges free. Fold the unstuffed halves over each flatbread. Press the edges together firmly. Cook in the pan on each side. Serve on a plate and top with onion rings, and of course, tzatziki. Serve with either Greek salad, potato quarters, lightly fried in a pan, or tomato rice.
