Ingredients for 8 servings:

  • 1 liter whole milk
  • 250 g pasta
  • 50 g butter
  • 1 pinch of salt
  • ½ lemon(s), zest, optional
  • 3 eggs
  • some fat for the mold

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 1 hour 5 minutes; Total time approx. 1 hour 15 minutes

with noodles

Bring the milk to a boil with the pasta (or rice) and add butter, salt, and lemon zest, if desired. Don’t forget to stir! Let the mixture boil for 3-5 minutes, then remove from the heat. Gradually add the eggs while stirring vigorously. Pour the mixture into a well-greased dish and place it in a hot water bath for one hour. Remove the rim of the Hans and place it on a plate. Serve with a cherry, rhubarb, or dried fruit sauce. Tip: If you let the Hans cool slightly before turning it out, it will hold its shape better.
