Big, squishy chocolate chip cookies

Ingredients for 1 servings:

  • 4 dates, pitted and sliced
  • 40 g butter
  • 280 g flour
  • 240 g sugar, brown
  • ½ tsp baking powder
  • ½ tsp salt
  • 1 large egg(s)
  • 100 g chocolate (chocolate chips)
  • 1 small bottle(s) of vanilla flavoring

Instructions

Working time approx. 35 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 55 minutes

Low-fat

Cook the dates over medium heat for 10-15 minutes until softened. Simmer the butter over medium heat until browned. Combine the flour, baking powder, and salt in a bowl. Press the dates through a sieve. Stir together the date puree, brown butter, and brown sugar, then add the egg and vanilla. Add the flour mix and mix on low speed until just combined. Knead in the chocolate chips by hand. Form small balls, split them in half, press them together again with the points facing up, and place them on parchment paper (leave enough space, as they will grow larger). Bake in the oven at 325°F for about 20 minutes, until firm on the outside.
