Ingredients for 1 servings:

  • 5 large zucchini
  • 1 large tomato(s), finely chopped
  • 2 spring onions, finely chopped
  • 1 tbsp parsley, chopped
  • 2 slice(s) salami, finely chopped
  • 50 g cheese, grated

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Party snacks, makes about 30 pieces

Cut each zucchini into three equal pieces (approx. 4 cm). Cut each piece lengthwise. Using a small teaspoon, scrape some of the liquid out of each piece. Simmer the zucchini for 3 minutes, drain well, and pat dry with a paper towel. Finely chop all the remaining ingredients and mix in a small bowl. Spoon the filling evenly into the zucchini boats. Grill the boats until the cheese is melted. Ready to serve.
