Biscuit & Co: Cantuccini

  • 200 g Peeled almonds
  • 400 g Flour
  • 1 Orange
  • 0,5 Pä Baking powder
  • 120 g Sugar
  • 4 Eggs
  • 1 Egg yolk
  • 1 tbsp Vanilla sugar
  1. Lightly toast the almonds, let them cool down. Wash the orange thoroughly, rub the peel, squeeze out the juice. Mix the flour with baking powder, sugar, vanilla sugar and a pinch of salt. Knead in the 4 eggs and 2 tablespoons of orange juice and the almonds.
  1. Cut the dough into quarters, form a roll at a time, place it on a baking tray lined with baking paper, press down lightly. Do the same with the other dough quarters. Brush the rolls with the beaten egg yolk.
  1. Bake the rolls in a preheated oven at 160 degrees for 20 minutes. Brush with the rest of the orange juice while still hot, cut into 1 cm thick slices and lay them out wide on baking sheets, bake for another 15-20 minutes. Let it cool down well and keep it airtight.
