Ingredients for 2 servings:

  • 1 jar Bismarck herring
  • ½ beetroot
  • ¼ celeriac, cooked
  • 2 m.-large gherkins
  • 1 m.-sized onion(s)
  • ½ m.-sized apple, sour
  • 1 tsp, heaped mustard
  • 2 tbsp, heaped mayonnaise
  • 2 tbsp crème fraîche
  • e.g. salt and pepper
  • n. B. vinegar
  • n. B. sugar

Working time approx. 30 minutes; Rest period approx. 1 day; Total time approx. 1 day 30 minutes

a hearty fish salad

Finely dice the beetroot, onion, gherkins, celeriac, and herring. Wash, peel, quarter, and core the apple, and also finely dice it. Mix together the mayonnaise, mustard, and crème fraîche. Stir in the beetroot, onion, herring, apple, celery, and gherkin and season with vinegar, sugar, salt, and pepper. The salad should marinate in the refrigerator for at least 24 hours. It goes perfectly with boiled potatoes or on brown bread.
