Ingredients for 4 servings:
- 400 g bison fillet(s)
- 2 m.-sized onion(s)
- 400 g mushrooms
- 10 g morels, dried
- 150 ml beef broth
- 1 tbsp clarified butter
- 3 tbsp Worcestershire sauce
- 1 pinch(s) of cane sugar
- 2 tbsp mustard
- 250 ml cream
- 200 ml sour cream
- 2 tbsp maple syrup
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes
Cut the mushrooms and onions into thin slices and rings. Soak the morels in the beef broth. Cut the fillet into strips and fry briefly in hot clarified butter. Remove the strips and keep warm. Add the onions, sugar, and mushrooms to the frying fat. Sauté until translucent. Finely chop the morels. Add them to the mushrooms along with the meat and beef broth. Finally, add the mustard, Worcestershire sauce, cream, sour cream, and maple syrup. Simmer for 20 minutes. Tip: Serve with rice or hash browns.
