Ingredients for 1 servings:

  • 400 g beans, black from the can, (260 g drained weight), drained
  • 2 tbsp chia seeds
  • 4 tbsp water, cold
  • 70 g maple syrup
  • 1 tsp vanilla, ground
  • 100 g banana(s), ripe
  • 40 g cocoa powder
  • 5 tbsp liquid coconut oil
  • 1 pinch of salt
  • possibly peanuts, salted
  • possibly cranberries, dried
  • possibly sour cherries, dried
  • possibly chocolate coating

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

for 12 cookies

Mix chia seeds with water, let it swell briefly, and then stir in maple syrup and vanilla. Rinse beans under running water, add banana, cocoa, coconut oil, salt, and maple syrup mixture, and blend with an immersion blender until smooth. Drop the dough by the spoonful onto two baking sheets lined with parchment paper and shape into cookies. Decorate with the toppings, if desired. Bake in a preheated oven at 200°C (top/bottom heat) for approximately 12-15 minutes. The cookies will set after cooling.
