Ingredients for 16 servings:

  • 45 g flour
  • 1 tsp baking powder
  • 1 pinch of salt
  • 2 eggs, separated
  • 70 g sugar
  • 2 drops flavoring (lemon)
  • 2 ½ tbsp butter, melted
  • ½ tsp cream of tartar baking powder
  • 1 tsp vanilla extract
  • 3 tbsp cocoa powder
  • 100 ml cherry juice (from the jar)
  • 3 tbsp cornstarch
  • 1 ½ tsp sugar
  • 2 ½ tsp lemon juice
  • 500 g cherry(s), drained
  • 700 g cream cheese
  • 175 g sugar
  • 50 g cornstarch
  • 1 tbsp vanilla extract
  • 2 tsp Brandy, Cherry
  • 3 eggs
  • 170 g cream
  • e.g. chocolate, bitter, melt
  • e.g. cream
  • n. B. Cherry(s)

Working time approx. 30 minutes; Rest time approx. 6 hours; Total time approx. 6 hours 30 minutes

Black Forest Cherry Cheesecake

Line a 26cm springform pan with aluminum foil (bottom and sides). Base: Mix flour, baking powder, and salt in a bowl and set aside. Beat the egg yolks on high with a mixer for about 3 minutes; add 2 tablespoons of sugar and continue mixing for about 5 minutes. Now stir in the flour mixture, butter, and cocoa powder. In another bowl, beat the egg whites with cream of tartar and the remaining sugar; then carefully fold into the remaining batter. Pour the batter into the prepared pan and bake for about 10 minutes at 175°C. Then leave in the pan and set aside. Cherry filling: Bring the cherry juice, cornstarch, and sugar to a boil, then add the lemon juice and cherries. Let cool. Cheesecake: Mix together the cream cheese, sugar, and cornstarch; add the vanilla extract and brandy. Then beat in the eggs one at a time and briefly stir in the cream. Finally, fold in the cooled cherry filling and spread everything on the pre-baked base. Place the springform pan in a 2-3cm deep water bath (I use a deep baking sheet). Bake in the middle of the oven at 175°C for about 80 minutes, until the top of the cake is golden brown. Carefully remove from the oven and let cool for 2 hours; do not move. Then refrigerate for at least 4 hours. You can then decorate the cheesecake, for example, with icing, by sprinkling it with melted chocolate, or by placing a few cherries on top.
