Black Pepper Riebler

Ingredients for 3 servings:

  • 200 g buckwheat flour
  • 250 ml milk
  • 3 eggs
  • 2 apples
  • ½ tsp, leveled salt
  • 50 g butter
  • e.g. powdered sugar (icing sugar)
  • 1 jar cranberries

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 35 minutes

Buckwheat pancakes from South Tyrol

Mix the buckwheat flour with the milk and let it sit for 1 hour. Stir in the eggs one at a time and add salt. Melt 30g of butter in a pan. Brown the Riebler mixture in it, then turn and cut into pieces. Continue frying and breaking it up until you have lots of small pieces. Peel the apples, dice them, add them with the remaining butter, and continue frying. Sprinkle the Riebler with powdered sugar and serve with wild cranberries.
