Ingredients for 4 servings:

  • 12 stalk(s) salsify(s)
  • 1 lemon(s), juice
  • 2 oranges
  • 1 tbsp olive oil
  • 1 tsp sugar
  • 1 tbsp butter
  • salt and pepper

Peel the salsify under running water to prevent staining your hands. Cut the salsify into 10-centimeter pieces and place them in water with lemon juice. Once all the salsify is peeled, bring the lemon water to a boil and simmer the salsify for 10 to 12 minutes. Drain the salsify and let it cool. Peel the zest from the oranges and squeeze out the juice. Blanch the zest three times, changing the water each time. Brown the salsify pieces on all sides in hot olive oil, then sprinkle with sugar and let it caramelize. Add the orange juice and zest and simmer until the liquid thickens to a syrupy consistency. Finally, stir in the butter and season to taste with salt and pepper.
