Blackberries on the cloud

Ingredients for 1 servings:

  • 1 kg blackberries, cleaned
  • 4 large eggs
  • 200 g icing sugar
  • 250 g flour, smooth
  • ½ pack of baking powder
  • 200 g sugar
  • Icing sugar (icing sugar), for sprinkling
  • 200 g butter, room temperature

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Separate the eggs, cut the room-temperature butter into small pieces, and beat with a mixer for about 5 minutes until fluffy. Gradually stir in the egg yolks. Combine the flour and baking powder and stir in. Spread the batter onto a deep baking tray lined with baking paper. Bake in a preheated oven on the middle rack at 180°C for about 13 minutes, then allow to cool. Beat the egg whites until stiff peaks form, then slowly add the sugar and beat again until very stiff peaks form. Carefully fold in 600g of blackberries and spread this mixture gently over the base. Top with the remaining blackberries. Bake again at the same temperature for about 18 minutes. Once cooled, sprinkle with icing sugar if desired. Tip: This also works well with plums.
