Blackberry-Vanilla Bundt Cake

Ingredients for 1 servings:

  • 250 g blackberries
  • 350 g flour
  • 1 tsp baking powder
  • 1 vanilla pod(s)
  • 250 g butter, soft
  • some salt
  • 230 g sugar
  • 5 eggs (size M)
  • 120 ml milk
  • 100 g powdered sugar
  • 1 tsp lemon juice

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 10 minutes

Sort the blackberries. Grease a Bundt cake pan thoroughly. Mix the flour and baking powder. Split the vanilla pod lengthwise and scrape out the seeds. Place the butter, a pinch of salt, sugar, and vanilla seeds in a bowl and beat until fluffy for at least 5 minutes. Beat in the eggs one at a time, for 1/2 minute each. Add the flour and milk alternately and mix quickly. Pour the batter and blackberries into the baking pan. Bake in a preheated oven at 175°C (160°C fan-assisted oven) on the rack in the lower third of the oven for about 50 minutes. Let the cake cool in the pan for 10 minutes, then turn out onto a wire rack. Mix the powdered sugar and lemon juice until smooth and glazed and spread over the cake.
