Ingredients for 4 servings:

  • 1,000 g chard with stems
  • 500 g potatoes, waxy
  • ½ dl olive oil
  • 4 cloves garlic, finely chopped
  • 1 medium-sized onion(s), finely chopped
  • Salt and pepper from the mill
  • possibly pine nuts or almond flakes or pistachios
  • possibly feta cheese

Working time approx. 30 minutes; Cooking/baking time approx. 13 minutes; Total time approx. 43 minutes

Mangold Dalmatian style

Bring a large pot of salted water (approx. 4-6 liters) to a boil. Peel the potatoes and cut them into quarters, sixths, or eighths (depending on their size), and cook for 6 minutes. Meanwhile, halve the washed chard lengthwise, then cut into approximately 3 cm wide strips and add them to the potatoes. Cook both together for another 4 minutes to soften the vegetables. Dice the onion and garlic. Heat olive oil in a deep pan (or wok) and sauté the finely chopped onion until translucent. Before the onion begins to brown, add the drained vegetables, the finely chopped garlic, salt, and freshly ground black pepper. Sauté for another 2-3 minutes, stirring. An ideal accompaniment to fried or grilled fish. For a vegetarian main course, garnish with cubes of feta cheese and sprinkle with pine nuts (or flaked almonds or coarsely chopped pistachios).
