Blitz – apple foam, ultimately delicious and low in calories

Ingredients for 2 servings:

  • 1 apple, sour
  • 1 tbsp sugar or sweetener
  • 1 egg white, fresh
  • 1 tsp lemon juice or
  • ½ tsp citric acid

Instructions

Working time approx. 5 minutes; Total time approx. 5 minutes

Peel, core, and roughly chop the apple into a tall blender. Purée using the blender with the blade attachment. Add the sugar and lemon juice. Now attach the whisk to the blender. Add 1 fresh egg white to the apple puree and whisk with the blender, repeatedly pulling up from the bottom of the blender to create plenty of volume and firmness. This takes about 1-2 minutes. Serve immediately, before the foam collapses (but it will keep for about 15-30 minutes without any problems). It tastes deliciously fresh, totally fluffy and light – even our kids loved it. I’ve also made it with blackberries – also highly recommended.
