Ingredients for 4 servings:
- 4 small artichokes
- 2 m.-sized onion(s)
- 4 tbsp butter
- Parmesan, grated or other hard cheese
- Breadcrumbs
- 1 lemon(s)
- salt and pepper

Clean the artichokes by removing the tough outer leaves and cutting off the tops. This is best done with scissors. Immediately place them in lemon water or zest them with lemon. Cook in boiling lemon water for about 20 minutes until soft. Meanwhile, dice the onions fairly finely and fry them in the butter until soft, but do not allow them to brown. Season the onion butter with salt and pepper, and let it cool. Stuff the artichokes with the butter and place in a buttered baking dish. Mix the cheese with the breadcrumbs and sprinkle over the artichokes. Bake at 180°C for about 20 minutes.
